Like most food products, and just like a cut fruit exposed to air, YES, olive oil is indeed sensitive to oxidation !

What are the main factors that cause oxidation in olive oil?

Air, light and heat

  1. So, here’s what you should do:
    Choose an opaque bottle or, even better, a can — transparency is great for your eyes, not so much for your oil !
  2. Opt for smaller containers unless you're a professional chef or a heavy olive oil user. This ensures the oil is consumed quickly and avoids degradation.
  3. Store your olive oil between 10°C and 22°C. Avoid keeping it in a cupboard above a heat source, or near any source of heat in general.
