MEET ALEXIS MUÑOZ, THE PRODUCER AND ELAÏOLOGIST WHO SUPPLIES THE FINEST FRENCH CHEFS.


When asked to describe himself in a few words, Alexis humbly responds: "I am the producer of 18:1 olive oils. I am also an engaged elaïologist whose goal is to democratize excellence and make it accessible to as many people as possible." Alexis Muñoz is often compared to the oenologist of the olive oil world. His playground? Spain, the land of olive oil, and France, his homeland. After an initiatory journey around the Mediterranean basin—12 years of travel guided by the olive tree routes—Alexis decided to make olive oil a product of excellence. He set his own rules, oriented all his production around the variety and ripeness of the fruits, and challenged himself to achieve perfect balance.


“No blends, no mixing—just the juice from the olives, harvested by day and pressed by night, ensuring a freshness in the mouth that is unmatched,” proudly affirms the nomadic and dedicated producer. He now leads several next-generation olive groves, where organic farming and solar power blend effortlessly with quality and transparency. The result? Exceptional, singular, and intense monovarietal olive oils. Just as exceptional and intense as his relationship with the chefs (many of them Michelin-starred) he now works with daily and has become a remarkable ally to.
