Nicolas Gautier, Chef at Château d’Esclimont, constructs his dishes like sentences, with a clear and refined culinary grammar, where flavors and textures wrap around a star ingredient.
The only chef to have earned the title of "Young Talent" from Gault&Millau twice (in 2010 and 2013), he elevates the foundations passed down to him by his father, a restaurateur.
Alexis Muñoz oils have now been incorporated into the service of Chef Nicolas Gautier.
