You may know Alexis Muñoz as an olive oil expert and producer of 18:1 Olive Oils. He is also the founder and driving force behind the NECTAR Regenerative Olive Oil Program.

In a world where environmental, social, and economic challenges are becoming increasingly critical, NECTAR stands out as a key player in agroecology and olive growing in France.


Our goal is to create a comprehensive organic olive oil sector in Occitania, based on agricultural practices directly inspired by regenerative farming. From planting the olive trees to processing the olives in a dedicated mill—scheduled to open in 2026 in Roullens at the Domaine de Baudrigue—NECTAR oversees every step of the process.


Through agronomic and ecological support, Alexis Muñoz also assists farmers and guides them toward sustainable practices.


Additionally, NECTAR conducts research and development projects at both the national and European levels, participates in training modules, and raises awareness among industry professionals and consumers about environmental issues.
