"Today, I would like to talk to you about the olive tree… We are currently harvesting olives, and this will continue until January. Regardless of the variety, olives are born green but their color darkens and turns brown with maturity.


From a translucent green at the first pressing, olive oil has multiple flavors: apple, hazelnut, artichoke…"
Today, there are 1,500 olive tree varieties spread around the Mediterranean, but only 400 of them produce fruits that can be transformed into oil. In Andalusia, Greece, where olive cultivation is very important, the pits are used as fuel. It’s a historic ecosystem that must be passed down, and perhaps one day, in France!
Everything I am telling you comes from a passionate expert, a brilliant elaïologist who can recognize the country of origin, the variety, and sometimes even the mill that pressed it… His name is Alexis Muñoz.
