MUST LISTEN – C’est excellent on Sud Radio

December 2, 2019
"Today, I would like to talk to you about the olive tree… We are currently harvesting olives, and this will continue until January. Regardless of the variety, olives are born green but their color darkens and turns brown with maturity.
From a translucent green at the first pressing, olive oil has multiple flavors: apple, hazelnut, artichoke…"
Today, there are 1,500 olive tree varieties spread around the Mediterranean, but only 400 of them produce fruits that can be transformed into oil. In Andalusia, Greece, where olive cultivation is very important, the pits are used as fuel. It’s a historic ecosystem that must be passed down, and perhaps one day, in France!
Everything I am telling you comes from a passionate expert, a brilliant elaïologist who can recognize the country of origin, the variety, and sometimes even the mill that pressed it… His name is Alexis Muñoz. His passion has become his profession. Today, he produces exceptional olive oils… 18:1, the oleic acid formula, which great chefs love. [...]
His philosophy is to transmit and educate for better consumption. Because there is an education needed for olive oil, just as there is for wine. The variety and richness of vines and wines is comparable to that of olives and oils… Perhaps that’s why the olive tree is called the tree of life."
