Did you know? The olive is a winter fruit! In September, the color of the olive begins to change as the fruit starts to ripen, transitioning from green to black. Yes, a black olive is simply a green olive that has matured!
The olive harvest typically begins in October with the picking of green olives, continues into mid-November when the olives reach full maturity, and concludes at the end of December with the black olives. The color of an olive does not indicate its variety but rather its stage of maturity.
In recent years, climate change has had a direct impact on harvest timings and olive oil production. For example, this year, due to high temperatures and drought conditions, the harvest will begin 8 days earlier than usual, and while the quantity of olives on the trees will be lower than normal, the quality of the fruit remains exceptional!
