12 months of anticipation to experience this intense moment… the first harvest of 2020! We begin our 2020 production with the Picual variety. The olives are still green, harvested and pressed… to obtain a pure olive juice.

From the warm scent of the soil, the freshly plowed earth, to the intoxicating aromas of olive paste, a deep joy fills us. The joy of seeing this new production campaign unfold before us!

Typically, Picual olives are harvested in November, but we’ve advanced the harvest, accepting a decrease in the solid-liquid yield to produce a more vibrant olive juice. Fresh and full of chlorophyll notes, it will take 10 kg of olives to produce 1L of 18:1 oil, instead of the usual 5 kg.

Producing olive oil requires precision… precision in selecting the lots of olives, in choosing the harvest days, in controlling temperatures and processing times at the mill, and in the tasting before and after decantation. Our olive oil production follows our specifications to the letter, scrupulously. We’ll meet again after the oil is bottled, for the tasting!
