First harvest… 12 months of waiting to experience this intense moment… A night at the mill… Our first fruits pressed from the 2019 harvest…
The joy of finally seeing this new production season unfold before us. Harvesting, crushing, malaxing, separating, decanting. From the warm scent of the soil, the plowed earth, to the intoxicating aromas of the olive paste.
Producing olive oil means being precise…
Precise in selecting the olive batches, precise on the days of harvest, precise about temperatures and transformation times at the mill, precise in tasting before and after decanting. Producing our olive oil means following our specifications point by point, scrupulously.
Character, smoothness, liveliness—this will be our 18:1 “green fruits – early harvest”, extracted from Picual variety olives!
