A product born from a meeting of passionate individuals and a sharing of expertise. A noble variety of eggplant, grown in Corsica by Monsieur Appert, crafted by chef Jean-Michel Querci, and paired with Alexis Muñoz’s premium olive oils.


With texture, flavor, and a touch of sweetness, it’s a perfect marriage of eggplant and 18:1 olive oil "late harvest," made from the 100% Cornicabra variety, with mature fruits.
