The work done in 2015, both in the olive groves and alongside chefs, is now recognized.
18:1 with green fruitiness has become a benchmark for olive oil on French tables and in the hands of top chefs.
In 2016, we let the olives mature!
18:1 with black fruitiness is a monovarietal olive oil made from olives harvested late and left to over-ripen for several days. Our goal was to recreate the olive oils of yesteryear—rich, fruity, with the distinctive taste of black olives, and only black olives, preserved and candied!
In this way, we support chefs and flavor enthusiasts, offering them the choice of fruitiness based on their mood or the cuisine of the day.
Palates can now be educated to appreciate these candied, smooth notes, without bitterness or sharpness, with a more refined character. This oil pairs perfectly with red meats or traditional vanilla and chocolate desserts.
