Participating in harvests and productions, from Hasbaya in Lebanon to Cappadocia in Turkey, from the olive trees of Fez in Morocco to the highlands of the Alto Douro, from Haute-Provence to the arid plateaus of La Mancha, from Tuscany to the Bou Hedma Park in Tunisia.
Sharing the daily life of men and women of value, connected to the land, deeply tied to sharing and passing on knowledge.

2007 to Today
Building a mill in the heart of a protected natural park in Tunisia, establishing a sensory tasting school in Madrid to understand, analyze, and improve. The desire to produce various native olive varieties, planted here and there around the Mediterranean.
An expertise in both soil and beyond.
Première Matière is the company I founded to share my passion with chefs and gourmets. The desire to bring to kitchens the uniqueness of varieties, the intense flavors of different maturities.
